Gaby Galstaun, owner of BLVD in Amstelveen for twenty years, and Driss el Founti, who previously worked at Ron Blaauw, Harbour Club and Carbon, created Balthus & Co as a place to drop in for a glass of wine and stay for dinner. Eating out well shouldn't have to be expensive, even midweek. Tables are often booked well in advance, so reserve early.
